Girls Night: Tapas

Every so often the girls in my ‘hood get together for a girls night. Last night we all got together and had a blast. I’m glad we made the effort to get together. We are all so busy that it’s hard to stay connected and I think it’s good to connect with your neighbors.

The theme this time was tapas. Tapas is so easy to do. We made a few items but everything else we picked up at the store. Perfect for entertaining after a long work week.

Our tapas selection – prosciutto, figs, manchego, goat cheese, mozzarella with fresh basil and sundried tomatoes, mussels in a wine garlic sauce, spanish omelette, shrimp and linguica (it’s like chorizo), green olives, roasted red peppers, crusty bread, grapes and almonds.

Add some wine, beer and good conversation and we were all set. Dessert was a frozen peanut butter pie and an assortment of chocolate goodies provided by the bakery at our local grocery store.

I made the shrimp and linguica. I modified this recipe I found on the Food Network site. (Thanks Emeril!) I substituted linguica for chorizo, used regular paprika and forgot to add the parsley. Really easy to make.

I also made a Spanish omelette. This is the recipe I used. I followed it to the letter. I will be making this again. Tip – fry the potatoes, onion and garlic and let drain in advance. Then reheat the pan and cook when you’re ready.
