Good food, friends, stimulating conversation, wine and warm weather on the first day of spring all came together last night for a wonderful evening. Our hosts, Jill and John, couldn’t have have improved a thing.
Six teenagers, a newborn and seven adults enjoyed salsa/chips and asparagus wrapped with prosciutto for starters. For dinner there was grilled marinated london broil, caramelized onions, mushroom, crab-stuffed twice baked potatoes and a beautiful salad.
For dessert we had cheesecake.
The steak was delicious!
Jill’s London Broil Marinade
¼ cup Red Wine Vinegar
2 tbs. Olive Oil
2 tbs. Soy Sauce
2 tbs. Ketchup
1 clove chopped garlic
Pepper/onion powder
This recipe is enough for 3-4 lbs. of meat. Pierce the meat and turn it several times while marinating. Give the meat at least an hour, however refrigerating it overnight is best.
Her secret to grilling a perfect london broil is seven minutes a side, and then let it rest for 15 minutes. The steak was cooked perfectly – somewhere between medium and medium rare.
The asparagus wrapped with prosciutto is super easy and delicious. Simply spread goat cheese on prosciutto, wrap around asparagus and bake at 375 until the prosciutto starts to brown. Easy!
