Brown Trout in Parchment

Justin loves fish and Mark loves to fish. So I’ve got plenty of fish in my freezer. Mark’s last two fishing trips have resulted in a nice haul of brown trout and it is just delicious.

Now that Justin’s home from college for the summer, cooking for all of us is a little challenging because he’s not always on the same schedule that we are. That’s why this recipe works so well. I can prepare one for each of us and Justin can pop his into the oven when he’s ready.

You’ll need to tear off about 16″ of parchment paper for each packet.

Brown Trout in parchment

Salt and pepper both sides of a brown trout filet. Drizzle olive oil on each filet. Then squeeze some lemon juice on top, add a few capers, some fresh thyme and a few thin slices of onion.

Fold the parchment in half. Then carefully fold the parchment to seal the packet.

Bake for 12 minutes at 375F.

Carefully cut open the parchment package and add another squeeze of lemon.

This method of cooking allows the fish to steam and create a nice flavorful sauce. This is the first thing Justin requested when he came home for the summer. I’m just glad he requested an easy recipe for me to make.
