Brown Rice and Bathing Suits

We’re going to Florida next week for a little vacation and to visit my mother-in-law. I’m really looking forward to seeing her and, to be honest, I need a few days off.

What I’m NOT looking forward to is putting on a bathing suit for the first time in months. Usually I start my ‘bathing suit body’ prep with a July 4 deadline in mind. I am definitely not ready. Undaunted, I ordered two new bathing suit bottoms and a top from Athleta’s Tomales Bay Collection.

The bottom of this suit is just the right amount of coverage. Not too short. Not too long and not cut straight across the leg like a lot of boy shorts are. I’m working on my muffin top and back fat. I promise to post pics (not next week!) of me in this bathing suit.

To prepare I’ve been adding more whole grains and vegetables to my diet. This Brown Rice Salad is perfect. You can add even more vegetables if you want. It’s best served cold or at room temperature.

Brown Rice Salad
(makes about 6 cups)
1 1/2 cups brown rice
2 tomatoes
3 scallions
1/2 cucumber
1/3 cup parsley
1/3 cup good olive oil
one or two lemons
salt & pepper

Brown Rice Salad Ingredients (1024x754)While the brown rice is cooking chop up the tomatoes, scallions, cucumber and parsley. In a separate bowl whisk together the olive oil and juice from one lemon. Add more lemon, or oil, to your taste. After the rice is cooked, and while it’s still warm, toss the chopped vegetables and the olive oil/lemon mix together. Taste and season with salt and pepper to taste.
