Clean Eating, Spinach and Pinterest

Lately Justin has been on a spinach kick. Weird for a 17-year-old boy, right? He’s replaced the lettuce on his sandwiches with spinach. I think he got the idea from Subway (or Chipotle) where he likes to hang with his buddies after practice or before going to a movie.

I’ve been buying the large plastic containers of organic baby spinach and, in addition to putting it on sandwiches, have also been putting it in salads.

Enter Pinterest. What’s Pinterest? An online, virtual pin board. Pinterest helps me keep track of all kinds of things – including recipes I want to try.One recipe that I found was for Clean Eating Garlic Spinach on Tiffany’s Clean Eating blog.

What’s clean eating? Tiffany explains here. I don’t wholly subscribe to clean eating but I agree with it in principle – it definitely syncs with my own food philosophy.

Anyway, back to the garlic spinach. I made it. It was delicious and I will be using the same recipe to make swiss chard, pea shoots, broccoli, green beans . . . well, you get the idea.
