Fresh Herb Marinade

We grill a lot. All year round. I like to marinate meat but I don’t always plan ahead. This marinade is quick and flavorful. It’s versatile too – substitute the pork in the recipe with chicken or even veggies.

Grilled Pork Chops with Fresh Herb Marinade
serves 4
8 thin center-cut pork chops
1/3 cup olive oil
2 tablespoons lemon juice
1 teaspoon pepper
2 teaspoons salt
1 tablespoon fresh herbs – sage, thyme, oregano
 
In a small bowl, whisk the olive oil, lemon juice, salt, pepper and herbs. Place the meat in a plastic bag, pour in the marinade and let sit for 30 minutes. Grill the pork 3-5 minutes per side, depending on how thick they are. Transfer to a platter, cover and let rest for a few minutes. Be careful not to overcook.
