Brussels Sprouts with Apples, Rosemary & Candied Walnuts

- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 pound brussels sprouts, halved
- 1 large apple, cored and sliced
- Salt
- Pepper
- 1 sprig fresh rosemary
- For the candied walnuts
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 tablespoon sugar
- ¼ cup chopped walnuts OR pumpkin seeds
- For the sprouts:
- Heat butter and olive oil in a large skillet over medium heat.
- Add brussel sprouts and apples. Season with salt and pepper.
- Add the rosemary and cook over medium heat, STIRRING OCCASIONALLY (you want to get a good brown on your sprouts) for 8 minutes or until tender.
- For the candied nuts:
- Melt butter and sugars in a small saucepan.
- Add the nuts and stir for about 2 minutes.
- Remove from heat and set aside.
