An easy, make-ahead recipe for mini quiche.

  • 1 single pie crust
  • 4 eggs
  • ¼ cup milk
  • ½ cup cheese (equal parts Cabot Chipotle Cheddar and Cabot Alpine Cheddar)
  • Salt
  • Pepper
  • For filling:
  • ¼ cup green bell pepper, minced
  • ¼ cup onion, minced
  • ¼ cup bacon
  1. Roll out pie crust, using a muffin pan to measure. Cut into six squares. Press a square into each muffin cup.
  2. Preheat oven to 350F.
  3. Top with your choice of filling - peppers, onions, bacon, cheese.
  4. In a separate bowl, whisk together the eggs, milk, salt and pepper. Pour on top of the filling.
  5. Top with more cheese.
  6. Bake for 30 minutes, or until the centers are set.
