An abundance of fresh eggs and a love of cheddar cheese inspired this quick and easy recipe for ham, cheddar & swiss chard quiche. Great warm, served at room temperature or cold.

Ingredients
1 - 9" pie crust (store bought is fine)
3 slices deli ham, chopped
½ onion, sliced
1½ cups swiss chard (or spinach), chopped
1½ cups grated cheddar, divided in half (preferably equal parts Cabot Farmhouse Reserve & Cabot NY Vintage)
4 eggs
1½ cups milk
Dash of pepper
Instructions
Preheat oven to 350F.
Place 9" pie crust in a pie plate.
Saute onions and swiss chard in a skillet with a little oil until the onions are soft.
In the pie crust, layer the ham, half the cheese, the onion/chard mixture, and top with the remaining ham.
In a separate bowl, combine the eggs and milk.
Pour over the layered ingredients in the pie crust.
Bake for 40 minutes or until a knife inserted in the center of the quiche comes out clean.
Let sit for 10 minutes before slicing.
