Easy French Onion Soup
 
 
Step by step instructions to making delicious French Onion Soup.

Ingredients
  • 3-4 onions (5-6 cups) onions (yellow, sweet, red)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 sage leaf
  • 2 sprigs fresh thyme
  • 1-2 tablespoons sherry
  • 3 cups beef broth
  • salt
  • pepper
  • ½ baguette
  • 6 ounces Cabot Alpine Cheddar cheese, grated
Instructions
  1. Roughly chop or thickly slice the onions.
  2. In a heavy bottomed saucepan, over low heat, add the onions, butter, olive oil, sage and thyme.
  3. Cook over low heat, stirring every so often, until the onions are a nice golden brown. This should take about 45 minutes.
  4. Remove the thyme stem and sage leaf.
  5. Add the sherry and let cook for another five minutes.
  6. Add the beef broth. Taste and add salt and pepper to taste.
  7. Let simmer for another 20 minutes.
  8. In the meantime, slice the bread into ½" thick slices.
  9. Place under the broiler and toast until golden.
  10. Remove from oven and flip. Top with grated cheese. Place back under the broiler.
  11. Serve the soup with the cheese toasts on top.
