Easy French Onion Soup

Serves: 2 to 4
- 3-4 onions (5-6 cups) onions (yellow, sweet, red)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 sage leaf
- 2 sprigs fresh thyme
- 1-2 tablespoons sherry
- 3 cups beef broth
- salt
- pepper
- ½ baguette
- 6 ounces Cabot Alpine Cheddar cheese, grated
- Roughly chop or thickly slice the onions.
- In a heavy bottomed saucepan, over low heat, add the onions, butter, olive oil, sage and thyme.
- Cook over low heat, stirring every so often, until the onions are a nice golden brown. This should take about 45 minutes.
- Remove the thyme stem and sage leaf.
- Add the sherry and let cook for another five minutes.
- Add the beef broth. Taste and add salt and pepper to taste.
- Let simmer for another 20 minutes.
- In the meantime, slice the bread into ½" thick slices.
- Place under the broiler and toast until golden.
- Remove from oven and flip. Top with grated cheese. Place back under the broiler.
- Serve the soup with the cheese toasts on top.
