Recipe for classic Clams Casino with Bacon

  • 4 slices Jones Dairy Farm Hickory Smoked Dry Aged Bacon
  • 1½ dozen littleneck clams, scrubbed and shucked
  • 1 scallion, white and green tops
  • 1½ stalks celery
  • 1 carrot
  • 1, 2" square piece of roasted red pepper (optional)
  • 1 small clove garlic
  • 1 tablespoon butter, softened
  • 1½ teaspoon bacon drippings
  • 1 teaspoon of fresh lemon juice
  • ¼ teaspoon lemon zest
  • ⅛ teaspoon crushed red pepper
  • 1 tablespoon grated parmesan
  • 1 tablespoon parsley, minced
  1. Preheat oven to 425F. Place the bacon on a rimmed baking sheet. Cook for 8-10 minutes. The bacon should be partially cooked but not crispy. Drain on paper towels. Reserve the bacon drippings.
  2. Reduce the oven to 375F.
  3. While the bacon is cooking, shuck the clams making sure that each clam has a bit of juice in its half of the shell.
  4. Place the clams on a rimmed baking sheet.
  5. Make the topping by placing the rest of the ingredients, except the parsley, in a food processor. Process until well combined, but still with a little texture.
  6. Top each clam with topping.
  7. Top the topping with a 1" piece of bacon.
  8. Bake at 375F for 10-15 minutes. Bacon will be nice and crisp and the clams will be done.
  9. Sprinkle the parsley on top.
  10. Serve with fresh lemon.
