A recipe for flaky empanada pastry which can be filled with whatever you like.

Serves: 3-4
  • 2 cups all purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup shortening
  • ½ up ice water
  1. Sift flour, salt and baking powder into a food processor fit with a blade.
  2. Add the shortening and pulse until the mixture is a fine meal.
  3. With the machine running, add the water slowly until it forms a ball (you may not need all the water).
  4. Refrigerate 20-30 minutes and then roll dough on a lightly floured counter - about ⅛" thick.
  5. Cut dough into 12 - 4" circles.
