Sausage and Kale Penne Alfredo

Quick and easy, mostly one-pot meal that's ready in about 30 minutes.

Ingredients
  • One bunch kale - rinsed, trimmed and roughly chopped
  • 2 cloves garlic, crushed
  • olive oil
  • 12 ounces Jones Dairy Farm sausage
  • 1 cup of heavy cream
  • 2 cups penne pasta, uncooked
  • ¾ cup chicken broth
  • ¼ cup dry white wine
  • ½ cup grated parmesan
  • salt and pepper
Instructions
  1. In a large pot of salted water, boil the penne pasta until al dente.
  2. Wash the kale. Trim the stalks and roughly chop.
  3. In a large skillet saute over medium high heat, add enough oil to coat the bottom of the skillet and add the garlic and kale. Cook until the kale is wilted. Remove from skillet and set aside.
  4. In the same skillet, add the sausage. Cook until brown, breaking it up into bite-sized pieces. Remove and set aside.
  5. Add the wine and chicken broth to the skillet, scraping the bottom to remove the nicely browned bits. Reduce heat.
  6. Add the heavy cream and cook until it begins to thicken - about 3 to 5 minutes.
  7. Add the sausage, kale and penne along with the grated parm. Stir.
  8. Adjust salt and pepper. I like to add lots of black pepper.
