Homemade Cream of Tomato Soup

  • 2 tablespoons olive oil
  • 2 small shallots, thinly sliced
  • 1 clove garlic, thinly sliced
  • 2 fresh sprigs of thyme
  • 1 28-oz. can crushed tomato puree - I used Tuttorosso 'No Salt'
  • 1½ cups low-sodium chicken broth
  • ⅓ cup half and half
  • Salt and Pepper to taste
  1. In a medium saucepan, heat the oil. Add the shallots, garlic and thyme. Cook over medium heat until the tender.
  2. Add the tomatoes and chicken broth. Bring to a boil. Then reduce heat and let simmer for about 15 minutes.
  3. Taste. Add salt and pepper to your taste.
  4. If you like your soup chunky, leave it alone. If not, take half of it and blend or process in food processor, then add back to the pot.
  5. Stir in half and half.
  6. Taste again for final seasoning adjustment.
  7. Serve hot.
