Apple Pie with Crumb Topping

by Kimberly Hickok

Santa gave me a pie plate for Christmas. A really fancy pie plate. See what I mean?

“Santa” was my sister Kerri. She took a job during the holidays working at Williams-Sonoma. She called to tell me that she could get discounted merchandise. And then she asked me what I wanted for Christmas. Honestly, I didn’t know what to tell her. My kitchen is pretty well stocked. So she asked if I could use a pie plate. Great idea!

This plate eliminates the need for crimping the edges and the pie comes out beautifully.

Apple Pie with Crumb Topping

1 Pie Crust (store bought is fine)
4-6 apples – enough to fill the crust. I used Northern Spy and Cortland apples.
3/4 cup sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 tablespoon flour

Topping:
2/3 stick butter
1/3 cup flour
2/3 cup brown sugar
1/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Stir the apples, sugars, flour and spices - place in pie crust.

Stir the apples, sugars, flour and spices – place in pie crust.

Bake at 350F  for about an hour and 15 minutes. Test the apples with a fork or sharp paring knife to make sure they’re tender. If so, continue baking, checking every 10 minutes to see if the apples are ready. The topping will also be nice and brown. Let the pie cool and then dig on in!
Dig in! Ice cream optional!
